1 cup diced fresh fruit (strawberries, peaches, blueberries, etc.)
2 tablespoons maple syrup
Powdered sugar, for serving
Directions
In a large skillet over medium heat, cook the bacon until crispy, about 5 minutes. Remove the bacon from the skillet and set aside.
Add the butter to the skillet and melt. Dip each slice of bread into the egg mixture, coating both sides. Place the slices in the skillet and cook until golden brown, about 2 minutes per side.
In a shallow bowl, whisk together the eggs, milk, nutmeg, and cinnamon. Set aside.
In a medium bowl, mix the diced fruit and maple syrup. Set aside.
When the toast is cooked, spread the fruit mixture over one side of each slice. Sprinkle the cooked bacon over the fruit and fold the other side of the toast over the filling. Place the stuffed toast in the skillet and cook for an additional 2 minutes per side.
Serve the French toast warm, sprinkled with powdered sugar.
