Ingredients
- 1 lb. bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup butter, melted
- 1/2 cup milk
- 2 eggs
- 2 tablespoons butter, melted
Directions
- Preheat oven to 375°F.
- In a large bowl, combine crumbled bacon, cheddar cheese, flour, baking powder, salt, and pepper.
- Add melted butter and milk and mix until combined.
- In a separate bowl, whisk together eggs and butter until combined.
- Add egg mixture to the bacon-cheddar mixture and mix until combined.
- Using a spoon, scoop the mixture into greased muffin tins, filling each cup about three-quarters full.
- Bake for 20 minutes or until golden brown.
- Remove from oven and let cool for 5 minutes before serving.
