Ingredients

  • 1 lb. bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 2 eggs
  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 375°F.
  2. In a large bowl, combine crumbled bacon, cheddar cheese, flour, baking powder, salt, and pepper.
  3. Add melted butter and milk and mix until combined.
  4. In a separate bowl, whisk together eggs and butter until combined.
  5. Add egg mixture to the bacon-cheddar mixture and mix until combined.
  6. Using a spoon, scoop the mixture into greased muffin tins, filling each cup about three-quarters full.
  7. Bake for 20 minutes or until golden brown.
  8. Remove from oven and let cool for 5 minutes before serving.
