Ingredients
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 shallot, thinly sliced
- 2 eggs
- 1 cup tofu, diced
- 1/2 cup shrimp, peeled and deveined
- 1/4 cup fish sauce
- 2 tbsp tamarind paste
- 2 tbsp sugar
- 1/4 tsp red pepper flakes
- 1 cup bean sprouts
- 1/4 cup roasted peanuts, chopped
- Lime wedges for serving
- Fresh cilantro for garnish
Directions
- Soak rice noodles in hot water for 10 minutes, then drain and set aside.
- In a wok or large skillet, heat vegetable oil over medium-high heat.
- Add garlic and shallot, and sauté until fragrant.
- Push ingredients to one side of the pan and crack eggs on the other side, scramble until cooked.
- Add tofu and shrimp to the pan, and stir-fry until shrimp is pink and tofu is lightly browned.
- In a small bowl, mix fish sauce, tamarind paste, sugar, and red pepper flakes.
- Pour sauce over the noodles and stir-fry until well combined.
- Add bean sprouts and toss until wilted.
- Garnish with chopped peanuts, lime wedges, and fresh cilantro before serving.
