  • 1 can (6 ounces) tomato paste
  • 1/2 cup red wine
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the grated carrot and chopped celery. Cook for a few minutes until the vegetables soften.
  4. Pour in the crushed tomatoes and tomato paste. Stir to combine.
  5. Add the red wine, sugar, oregano, basil, thyme, and rosemary. Season with salt and pepper to taste.
  6. Bring the gravy to a simmer and let it cook uncovered for at least 45 minutes to an hour, stirring occasionally.
  7. Once the flavors have melded and the sauce has thickened, remove from heat.
