Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 2 cans coconut milk
  • 4 stalks lemongrass, smashed
  • 6 kaffir lime leaves
  • 5 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 1 inch ginger, sliced
  • 3 red chilies, sliced
  • 1 tbsp tamarind paste
  • 1 tbsp brown sugar
  • Salt to taste

Directions

  1. In a large pot, heat some cooking oil over medium heat and brown the beef stew meat. Remove and set aside.
  2. In the same pot, sauté the shallots, garlic, ginger, and red chilies until fragrant.
  3. Add the lemongrass, kaffir lime leaves, tamarind paste, and brown sugar. Stir well.
