Ingredients

  • 8 cups of water
  • 2 stalks of lemongrass, bruised
  • 6 kaffir lime leaves
  • 3 slices of galangal
  • 4 cloves of garlic, minced
  • 1 small onion, sliced
  • 2-3 Thai chilies, sliced
  • 1 cup of button mushrooms, sliced
  • 1 pound of shrimp, peeled and deveined
  • 1 cup of cherry tomatoes, halved
  • 3 tablespoons of fish sauce
  • 2 tablespoons of lime juice
  • 2 tablespoons of palm sugar
  • 1/4 cup of fresh cilantro, chopped
  • 1/4 cup of fresh Thai basil leaves

Directions

  1. In a large pot, bring the water to a boil.
  2. Add the lemongrass, kaffir lime leaves, galangal, garlic, onion, and Thai chilies to the pot.
  3. Reduce the heat and simmer for 10 minutes to infuse the flavors.
  4. Add the mushrooms and simmer for another 5 minutes.
  5. Add the shrimp and cherry tomatoes to the pot.
  6. Cook until the shrimp are pink and cooked through, about 3-4 minutes.
  7. Stir in the fish sauce, lime juice, and palm sugar.
  8. Taste and adjust the seasoning according to your preference.
  9. Remove the pot from the heat and garnish with fresh cilantro and Thai basil leaves.
  10. Serve hot with steamed rice or noodles.
