Ingredients
- 1 bitter melon
- 100 grams pork belly
- 100 grams firm tofu
- 1/2 onion
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon mirin (sweet rice wine)
- 1 tablespoon cooking oil
- Salt to taste
- Pepper to taste
Directions
- Slice the bitter melon in half lengthwise and remove the seeds. Cut the melon into thin half-moon slices.
- Boil a pot of water and blanch the bitter melon slices for 2-3 minutes. Drain and set aside.
- Cut the pork belly into thin strips. Season with salt and pepper.
- In a large pan or wok, heat the cooking oil over medium heat. Add the pork belly and stir-fry until cooked through.
