Ingredients
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 2 eggs, beaten
- 8 oz shrimp, peeled and deveined
- 4 oz tofu, diced
- 1 cup bean sprouts
- 2 green onions, sliced
- 2 tbsp chopped peanuts
- 2 tbsp chopped cilantro
- 1 lime, cut into wedges
Directions
- Soak the rice noodles in hot water for 8-10 minutes or until they are soft. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for 1 minute.
- Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
- Add the shrimp and tofu to the skillet and stir-fry for 2-3 minutes or until shrimp are pink and cooked through.
- Add the soaked rice noodles to the skillet and toss with the other ingredients.
- Pour the Pad Thai sauce over the noodles and mix well. Cook for another 2 minutes.
- Add the bean sprouts and green onions to the skillet. Stir-fry for 1-2 minutes or until the vegetables are slightly tender.
- Remove the skillet from the heat and garnish the Pad Thai with chopped peanuts and cilantro.
