Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 8 oz shrimp, peeled and deveined
  • 4 oz tofu, diced
  • 1 cup bean sprouts
  • 2 green onions, sliced
  • 2 tbsp chopped peanuts
  • 2 tbsp chopped cilantro
  • 1 lime, cut into wedges

Directions

  1. Soak the rice noodles in hot water for 8-10 minutes or until they are soft. Drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for 1 minute.
  3. Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  4. Add the shrimp and tofu to the skillet and stir-fry for 2-3 minutes or until shrimp are pink and cooked through.
  5. Add the soaked rice noodles to the skillet and toss with the other ingredients.
  6. Pour the Pad Thai sauce over the noodles and mix well. Cook for another 2 minutes.
  7. Add the bean sprouts and green onions to the skillet. Stir-fry for 1-2 minutes or until the vegetables are slightly tender.
  8. Remove the skillet from the heat and garnish the Pad Thai with chopped peanuts and cilantro.
  9. Serve hot with lime wedges on the side.
