Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a medium bowl, mix together flour, baking soda, cinnamon and salt. Set aside.
In a large bowl, mix together the oil and sugar. Beat in the eggs one at a time. Stir in the apples and vanilla. Add the flour mixture and mix until just blended.
Pour batter into the prepared pan. Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow to cool before serving.
