Ingredients
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 pint cherry tomatoes, halved
- 1/2 cup fresh mozzarella balls, cut into chunks
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon garlic powder
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Directions
- Bring a pot of salted water to a boil. Add asparagus and cook for 2-3 minutes, until just tender. Drain and rinse with cold water to stop the cooking process.
- In a large bowl, combine asparagus, tomatoes, mozzarella, and basil. Toss to combine.
- In a separate small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper. Pour over asparagus mixture and toss to coat.
- Serve immediately.
