Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 cup vegetable broth
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch, dissolved in 2 tablespoons water
  • Salt and pepper, to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onion and garlic and cook until the onion is softened, about 3 minutes.
  3. Add the mushrooms and soy sauce and cook, stirring occasionally, until the mushrooms are tender, about 5 minutes.
  4. Add the broth and sesame oil and bring to a boil.
  5. Stir in the cornstarch mixture and cook until the soup has thickened, about 2 minutes.
  6. Season with salt and pepper, to taste.
  7. Stir in the cilantro, if using.
  8. Serve hot.
