Ingredients
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 tablespoons soy sauce
- 1 cup vegetable broth
- 1 teaspoon sesame oil
- 2 tablespoons cornstarch, dissolved in 2 tablespoons water
- Salt and pepper, to taste
- 2 tablespoons fresh cilantro, chopped (optional)
Directions
- Heat the oil in a large saucepan over medium-high heat.
- Add the onion and garlic and cook until the onion is softened, about 3 minutes.
- Add the mushrooms and soy sauce and cook, stirring occasionally, until the mushrooms are tender, about 5 minutes.
- Add the broth and sesame oil and bring to a boil.
- Stir in the cornstarch mixture and cook until the soup has thickened, about 2 minutes.
- Season with salt and pepper, to taste.
- Stir in the cilantro, if using.
- Serve hot.
