Ingredients

  • 2 cups cooked Arborio rice
  • 1 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/2 cup cooked ground beef
  • 1/2 cup cooked sausage
  • 1/2 cup chopped onion
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup plain bread crumbs
  • 1/2 cup olive oil for frying

Directions

  1. In a large bowl, combine the cooked Arborio rice, Parmesan cheese, and parsley.
  2. In a separate bowl, mix together the ground beef, sausage, onion, bell peppers, and garlic.
  3. Add the beef mixture to the rice mixture and stir to combine.
  4. Form the mixture into small balls, about the size of a golf ball.
  5. To make the coating, place the flour, eggs, and bread crumbs into three separate shallow dishes.
  6. Dip the rice balls into the flour, then the eggs, and finally the bread crumbs.
  7. Heat the olive oil in a large skillet over medium-high heat.
  8. Fry the arancini for about 4 minutes, or until golden brown.
  9. Remove the arancini from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
  10. Serve warm with your favorite dipping sauce.
