Ingredients
3 pounds ripe apricots
2 and 1/2 cups sugar
1/2 cup freshly squeezed lemon juice
1 teaspoon freshly ground lavender
2 tablespoons pectin
Directions
Rinse, halve, and pit the apricots.
Transfer the prepared apricots to a large pot and stir in the sugar and lemon juice.
Heat the mixture to a boil over medium heat, stirring constantly.
Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
Add the lavender and pectin and stir until fully combined.
Bring the mixture to a full rolling boil over medium-high heat and boil for 1 minute, stirring constantly.
Remove from heat and skim off any foam that has formed.
Transfer the hot jam to clean, sterilized jars and seal.
Process the jars in a boiling water bath for 10 minutes.
Allow the jars to cool before storing in a cool, dark place.
