Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 cup applesauce
- 1 cup grated zucchini
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat the oven to 375 degrees Fahrenheit.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, mix together the brown sugar, vegetable oil, egg, and applesauce until well blended.
- Stir in the grated zucchini and walnuts, if using.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Line a muffin tin with paper liners and fill each cup with the muffin batter. The cups should be about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Remove from oven and let cool before serving.
