Ingredients
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 1/2 cup diced mango
- 1/2 cup diced avocado
- 1/4 cup chopped fresh cilantro
- 4 slices of turkey
- 4 slices of bread
Directions
- In a small bowl, mix together the jerk seasoning and olive oil.
- Heat a large skillet over medium heat. Add the onion, bell pepper, mango, and avocado to the skillet. Cook for 5 minutes, stirring occasionally.
- Add the jerk seasoning mixture to the skillet and cook for an additional 3 minutes, stirring occasionally.
- Remove the skillet from the heat and stir in the cilantro.
- To assemble the sandwiches, layer two slices of turkey onto each slice of bread. Divide the jerk mixture among the sandwiches and top each with the remaining two slices of turkey.
- Serve immediately.
