Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut milk
  • 2 cups grated apple

Directions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the butter and sugars until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Add in the coconut milk and grated apple.
  6. Slowly add the flour mixture to the wet ingredients, stirring until just combined.
  7. Fill each paper liner with batter and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for 10 minutes, then remove from tin and cool completely on a wire rack.
