Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 teaspoons curry powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (14-ounce) can coconut milk
  • 1/2 cup natural peanut butter
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice

Directions

  1. Heat a large skillet over medium-high heat. Add the olive oil, garlic, ginger, curry powder, cumin, coriander, chili powder, salt and pepper and cook for 1 minute, stirring constantly.
  2. Add the coconut milk and peanut butter and stir until blended. Add the cubed chicken and cook for 5 minutes, stirring occasionally.
  3. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  4. Stir in the cilantro and lime juice and cook for 5 minutes more.
  5. Serve hot, with cooked rice or noodles.
