Directions
Heat a large skillet over medium-high heat. Add the olive oil, garlic, ginger, curry powder, cumin, coriander, chili powder, salt and pepper and cook for 1 minute, stirring constantly.
Add the coconut milk and peanut butter and stir until blended. Add the cubed chicken and cook for 5 minutes, stirring occasionally.
Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
Stir in the cilantro and lime juice and cook for 5 minutes more.
Serve hot, with cooked rice or noodles.
