Ingredients

  • 1/2 cup butter, melted
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold water
  • 2 cups tomatoes, peeled and diced
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 cup cornstarch

Directions

  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, combine the melted butter, flour, baking powder, and salt. Stir in the cold water and mix until the dough forms a ball.
  3. Press the dough into a 9-inch (23 cm) pie plate. Bake for 10 minutes and then set aside to cool.
  4. In a medium saucepan, combine the tomatoes, sugar, melted butter, cinnamon, nutmeg, and cloves. Bring to a boil over medium heat and then reduce the heat to low and simmer for 10 minutes.
  5. In a small bowl, mix together the cornstarch and 2 tablespoons of cold water. Slowly stir the cornstarch mixture into the tomato mixture and continue to simmer until thickened.
