Ingredients
- 1/2 cup butter, melted
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold water
- 2 cups tomatoes, peeled and diced
- 1/2 cup sugar
- 1/4 cup butter, melted
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 cup cornstarch
Directions
- Preheat oven to 400°F (200°C).
- In a medium bowl, combine the melted butter, flour, baking powder, and salt. Stir in the cold water and mix until the dough forms a ball.
- Press the dough into a 9-inch (23 cm) pie plate. Bake for 10 minutes and then set aside to cool.
- In a medium saucepan, combine the tomatoes, sugar, melted butter, cinnamon, nutmeg, and cloves. Bring to a boil over medium heat and then reduce the heat to low and simmer for 10 minutes.
- In a small bowl, mix together the cornstarch and 2 tablespoons of cold water. Slowly stir the cornstarch mixture into the tomato mixture and continue to simmer until thickened.
- Pour the tomato mixture into the pre-baked pie crust. Bake for 25 minutes or until the crust is golden brown.
- Serve warm or at room temperature.
