Ingredients
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 pound mushrooms, sliced
1 tablespoon all-purpose flour
1 cup vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegan butter
2 tablespoons chopped fresh parsley
Directions
Heat the olive oil in a large skillet over medium-high heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the mushrooms and cook until softened and lightly browned, about 5 minutes.
Add the flour and cook for 1 minute.
Add the broth, thyme, oregano, basil, salt, and pepper and bring to a simmer.
Reduce the heat to low and simmer for 10 minutes.
Add the vegan butter and stir until melted.
Stir in the parsley and season to taste with additional salt and pepper, if desired.
Serve over mashed potatoes, rice, or noodles.
Interesting Facts
Mushrooms are a great source of plant-based protein and are rich in B vitamins and minerals.
This gravy can be made ahead of time and reheated before serving.
The herbs can be substituted with other herbs of your choice.
