Ingredients
3 pounds potatoes, peeled and cut into 1/2-inch cubes
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano

1/4 cup butter
3 cloves garlic, minced
1/4 cup chopped fresh parsley
Directions
Preheat oven to 400°F. Grease a large baking sheet.
In a large bowl, combine potatoes, olive oil, oregano, salt, and pepper. Toss until potatoes are evenly coated.
Spread potatoes on the prepared baking sheet in a single layer. Bake for 25 minutes, or until potatoes are golden brown and crisp.
Meanwhile, melt butter in a small saucepan over medium heat. Add garlic and cook, stirring, for 1 minute.
Remove from heat and stir in parsley. Drizzle garlic butter mixture over potatoes and toss to coat.
Serve immediately.
Interesting Facts
This dish is great served with roasted chicken or fish.

Leftover potatoes can be stored in an airtight container in the refrigerator for up to 3 days.
