Ingredients

  • 3 pounds potatoes, peeled and cut into 1/2-inch cubes
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley

Directions

  1. Preheat oven to 400°F. Grease a large baking sheet.
  2. In a large bowl, combine potatoes, olive oil, oregano, salt, and pepper. Toss until potatoes are evenly coated.
  3. Spread potatoes on the prepared baking sheet in a single layer. Bake for 25 minutes, or until potatoes are golden brown and crisp.
  4. Meanwhile, melt butter in a small saucepan over medium heat. Add garlic and cook, stirring, for 1 minute.
  5. Remove from heat and stir in parsley. Drizzle garlic butter mixture over potatoes and toss to coat.
  6. Serve immediately.
