Ingredients

  • 1 (2-3 lb) beef roast
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon celery seed

Directions

  1. Preheat oven to 350°F.
  2. Remove roast from refrigerator and let it sit at room temperature for 30 minutes.
  3. In a small bowl, combine olive oil, garlic powder, salt, black pepper, Italian seasoning, onion powder, paprika, thyme, cayenne pepper, dry mustard, and celery seed. Stir to combine.
  4. Rub the roast all over with the seasoning mixture.
  5. Place roast in a roasting pan and roast in preheated oven for 60-75 minutes, or until the roast reaches an internal temperature of 140°F.
  6. Remove from oven and let the roast rest for 10 minutes before slicing and serving.
