Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons freshly grated ginger
  • 1 teaspoon black peppercorns, crushed
  • 1/2 teaspoon red pepper flakes
  • 1 bay leaf
  • 1/4 cup brown sugar
  • 2 tablespoons vegetable oil

Directions

  1. In a large bowl, combine the soy sauce, vinegar, garlic, ginger, peppercorns, red pepper flakes, bay leaf, and brown sugar. Mix until the sugar has dissolved.
  2. Add the chicken to the marinade and stir to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for the best flavor.
  3. Heat the oil in a large skillet over medium heat. Add the chicken and marinade to the skillet and cook, stirring occasionally, until the chicken is cooked through, about 10 minutes.
