Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 2 zucchini, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 cup cooked pasta
  • Fresh parsley, for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Add the carrots, celery, bell pepper, and zucchini.
  4. Cook for 5 minutes, stirring occasionally.
  5. Pour in the diced tomatoes and vegetable broth.
  6. Stir in the dried thyme, dried oregano, and bay leaf.
  7. Season with salt and pepper to taste.
  8. Bring the soup to a boil, then reduce heat to low.
  9. Cover the pot and let it simmer for 30 minutes, or until the vegetables are tender.
  10. Remove the bay leaf from the pot.
  11. Stir in the cooked pasta.
  12. Serve the soup hot, garnished with fresh parsley.
