Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large zucchini, diced
  • 1 eggplant, diced
  • 3 tomatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Directions
