Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup melted butter

Directions
Preheat oven to 375 degrees F.
In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
In a separate bowl, mix together melted butter, brown sugar, eggs, and vanilla extract until combined.
Fold in the dry ingredients into the wet ingredients, and mix until combined.
Fold in the zucchini and shredded coconut.
Pour the batter into a greased 9x5 inch loaf pan.
Bake in preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Allow the bread to cool for 10 minutes before transferring to a cooling rack.
