Ingredients
2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
2 bulbs fennel, diced
4 cups vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
Directions
In a large pot over medium heat, melt the butter.
Add the onion, garlic, and fennel and cook until softened, about 5 minutes.
Add the vegetable broth and bring to a boil.
Reduce the heat and simmer for 15 minutes.
Carefully transfer the soup to a blender and blend until smooth.
Return the soup to the pot and add the cream. Simmer for another 10 minutes.
Season with salt and pepper to taste and serve.
