Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bulbs fennel, diced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

  1. In a large pot over medium heat, melt the butter.
  2. Add the onion, garlic, and fennel and cook until softened, about 5 minutes.
  3. Add the vegetable broth and bring to a boil.
  4. Reduce the heat and simmer for 15 minutes.
  5. Carefully transfer the soup to a blender and blend until smooth.
  6. Return the soup to the pot and add the cream. Simmer for another 10 minutes.
  7. Season with salt and pepper to taste and serve.
