Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 2 bulbs fennel, diced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Directions
- In a large pot over medium heat, melt the butter.
- Add the onion, garlic, and fennel and cook until softened, about 5 minutes.
- Add the vegetable broth and bring to a boil.
- Reduce the heat and simmer for 15 minutes.
- Carefully transfer the soup to a blender and blend until smooth.
- Return the soup to the pot and add the cream. Simmer for another 10 minutes.
- Season with salt and pepper to taste and serve.
