Ingredients

  • 1 large zucchini, grated
  • 1/2 cup corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup plain Greek yogurt
  • 2 eggs
  • Oil for frying

Directions

  1. In a large bowl, combine the grated zucchini, corn kernels, flour, Parmesan cheese, parsley, baking powder, garlic powder, salt, and pepper. Stir until everything is well combined.
  2. In a small bowl, whisk together the Greek yogurt and eggs. Pour the wet ingredients into the dry ingredients and stir until everything is incorporated.
  3. Heat a large skillet over medium heat and add enough oil to coat the bottom of the pan. Working in batches, spoon the fritter batter into the pan and cook for 2-3 minutes on each side, or until golden brown. Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil.
  4. Serve the fritters warm with your favorite dipping sauce.
