Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1/2 pound bacon, diced
3 large tomatoes, diced
2 tablespoons tomato paste
4 cups chicken broth

Directions
Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook for 3-4 minutes, until the onion is softened.
Add the bacon and cook until it’s crisp, about 5 minutes.
Add the tomatoes, tomato paste, chicken broth, and oregano. Bring to a boil, then reduce the heat to low and let simmer for 30 minutes.
Season with salt and pepper, to taste. Serve with croutons, parmesan cheese, and a dollop of sour cream, if desired.
