Ingredients

  • 2 cups sushi rice
  • 2 ½ cups water
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Directions

  1. Rinse the sushi rice in a strainer until the water runs clear.
  2. Add the sushi rice to a medium-sized saucepan and add the water.
  3. Bring the pot to a boil over medium-high heat and then reduce the heat to low and cover with a lid.
  4. Simmer for 12 minutes, then remove the pot from the heat and let the rice sit for 10 minutes.
  5. In a small bowl, mix together the rice vinegar, sugar, and salt.
  6. Add the mixture to the rice and gently fold it in with a rice paddle or spoon.
  7. Let the rice cool completely before using it to make sushi rolls.
