Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1/2 cup snow peas
  • 2 tablespoons soy sauce
  • 1/2 teaspoon ground ginger
  • 8 ounces soba noodles
  • 2 tablespoons sesame seeds, toasted
  • 2 green onions, sliced

Directions

  1. In a small bowl, combine the sesame oil, soy sauce, honey, ginger, garlic powder and black pepper. Mix well and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5 minutes.
  3. Add the garlic, bell pepper, snow peas, soy sauce and ginger. Cook for 2 minutes, stirring frequently.
  4. Add the soba noodles and reserved sesame oil mixture and cook until the noodles are heated through, about 3 minutes.
  5. Garnish the noodles with sesame seeds and green onions. Serve immediately.
