Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 pound dry split peas, rinsed and drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery and cook until they are softened, about 5 minutes.
  3. Add the vegetable broth, split peas, oregano, thyme, and smoked paprika. Stir to combine and bring to a simmer.
  4. Reduce the heat to low and simmer for about 15 minutes, stirring occasionally, until the split peas are tender.
  5. Season with salt and pepper to taste.
