Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped fresh peaches
  • 1 tablespoon butter, melted
  • Maple syrup, for serving

Directions

  1. In a medium bowl, whisk together the cottage cheese, eggs, flour, baking powder, cinnamon, and salt until smooth.
  2. Stir in the peaches and melted butter until combined.
  3. Heat a large non-stick skillet over medium-high heat.
  4. Pour 1/4 cup of the batter into the skillet and cook until small bubbles appear on the surface, about 1 minute.
  5. Flip and cook until lightly golden, about 1 minute more.
  6. Repeat with the remaining batter.
  7. Serve the pancakes with maple syrup.
