Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 3 tablespoons Texas-style chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can kidney beans, drained and rinsed

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the ground beef and onion and cook, stirring frequently, until the beef is cooked through and the onion is softened and beginning to brown, about 8 minutes.
  3. Add the bell pepper and garlic and cook, stirring frequently, for 2 minutes.
  4. Add the chili powder, paprika, cumin, and cayenne pepper and stir to combine.
  5. Add the diced tomatoes and beans and stir to combine.
  6. Bring to a simmer, reduce the heat to low, and simmer for 30 minutes.
  7. Serve hot with your favorite toppings.
