Ingredients

  • 2 large eggplants
  • 3 cloves of garlic, minced
  • 3 tablespoons of tahini
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of cumin
  • Salt and pepper, to taste
  • 2 tablespoons of chopped fresh parsley for garnish

Directions

  1. Preheat the oven to 400 degrees F.
  2. Poke several holes in the eggplants with a fork and place on a baking sheet.
  3. Bake for 25-30 minutes, or until the eggplants are soft and cooked through.
  4. Let the eggplants cool completely.
  5. Cut the eggplants in half, and scrape out the flesh into a bowl.
  6. Add the garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper.
  7. Use a fork or a potato masher to mash the ingredients together until everything is well combined.
  8. Taste and adjust seasonings, if necessary.
  9. Transfer the baba ghanoush to a serving dish and garnish with chopped fresh parsley.
  10. Serve with warm pita bread, crackers, or vegetables.
