Ingredients
2 large eggplants
3 cloves of garlic, minced
3 tablespoons of tahini
Juice of 1 lemon
2 tablespoons of olive oil
1/2 teaspoon of cumin
Salt and pepper, to taste
2 tablespoons of chopped fresh parsley for garnish
Directions
Preheat the oven to 400 degrees F.
Poke several holes in the eggplants with a fork and place on a baking sheet.
Bake for 25-30 minutes, or until the eggplants are soft and cooked through.

Cut the eggplants in half, and scrape out the flesh into a bowl.
