Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 large carrots, diced
1/2 head napa cabbage, chopped
2 tablespoons tomato paste
3 cups vegetable broth
2 cups diced fresh tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions
Heat olive oil in a large saucepan over medium heat.
Add onion, garlic, and carrots and cook for 5-7 minutes, stirring occasionally.
Add napa cabbage and cook for another 5 minutes.
Stir in tomato paste and cook for 1 minute.
Add vegetable broth, tomatoes, oregano, basil, salt, and pepper and bring to a boil.
Reduce heat and simmer for 15 minutes.
Puree soup using an immersion blender or food processor.
Serve warm.
