Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 large carrots, diced
  • 1/2 head napa cabbage, chopped
  • 2 tablespoons tomato paste
  • 3 cups vegetable broth
  • 2 cups diced fresh tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onion, garlic, and carrots and cook for 5-7 minutes, stirring occasionally.
  3. Add napa cabbage and cook for another 5 minutes.
  4. Stir in tomato paste and cook for 1 minute.
  5. Add vegetable broth, tomatoes, oregano, basil, salt, and pepper and bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Puree soup using an immersion blender or food processor.
  8. Serve warm.
