Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 (14.5 ounce) can diced tomatoes
  • 2 cups vegetable stock
  • 2 apples, peeled, cored and diced
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the oregano and cumin and cook for 1 minute.
  4. Pour in the tomatoes and stock and bring to a boil.
  5. Reduce the heat to low and simmer for 15 minutes.
  6. Add the apples and simmer for 5 minutes more.
  7. Season with salt and pepper to taste.
  8. Serve topped with parsley.
