Enjoy the flavors of Thailand with this easy and delicious Thai Peanut Chicken recipe. Tender chicken breast is cooked in a creamy and flavorful peanut sauce, then served over rice noodles for a satisfying meal. This recipe is perfect for a quick weeknight dinner or for entertaining guests. The combination of peanut butter, ginger, garlic, soy sauce, and lime juice creates a deliciously tangy and savory sauce that complements the chicken perfectly. Top it off with crushed peanuts and fresh cilantro for added texture and flavor.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces rice noodles
  • 2 green onions, sliced
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons crushed peanuts

Directions

  1. In a small bowl, whisk together the peanut butter, soy sauce, honey, lime juice, grated ginger, minced garlic, and red pepper flakes until well combined.
  2. Slice the chicken breasts into thin strips and place them in a bowl. Pour half of the peanut sauce over the chicken and toss to coat. Let marinate for at least 15 minutes, or up to overnight in the refrigerator.
  3. Cook the rice noodles according to the package instructions. Drain and set aside.
  4. Heat a large skillet or wok over medium-high heat. Add the chicken and marinade to the skillet and cook for 5-6 minutes, or until the chicken is cooked through.
