Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter

  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried thyme

  • 2 eggs, beaten
  • 2 cups breadcrumbs
  • Oil for frying

Directions

  1. Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes. Drain the potatoes and return them to the pot.
  2. Add the milk, butter, salt, black pepper, garlic powder, onion powder, paprika, thyme, rosemary, and parsley to the pot with the cooked potatoes.
  3. Mash the potatoes until smooth and well combined with the seasonings. Allow the mixture to cool slightly.
  4. Shape the mashed potato mixture into small balls or any desired shape.
  5. In three separate bowls, place the flour, beaten eggs, and breadcrumbs.
  6. Dip each potato ball into the flour, then the beaten eggs, and finally coat them in breadcrumbs. Make sure each ball is evenly coated.
  7. Heat the oil in a deep fryer or large pot to 375°F (190°C).
  8. Carefully drop the coated potato balls into the hot oil and fry in batches until golden brown and crispy, about 3-4 minutes per batch.
  9. Remove the poofies from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.
