Ingredients

  • 2 pounds beef chuck roast
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

  1. Place the sliced onions and minced garlic in the bottom of a slow cooker.
  2. Season the beef chuck roast with salt and pepper, then place it on top of the onions and garlic.
  3. In a small bowl, mix together the beef broth, Worcestershire sauce, soy sauce, dried thyme, and dried rosemary. Pour this mixture over the roast in the slow cooker.
  4. Cover the slow cooker and cook on low heat for 5-6 hours, or until the beef is tender and easily shreds with a fork.
  5. Once the beef is cooked, remove it from the slow cooker and shred it using two forks. Set aside.
  6. In a small bowl, mix together the cornstarch and water until smooth. Stir this mixture into the liquid in the slow cooker, then return the shredded beef to the slow cooker.
  7. Cover the slow cooker again and cook on high heat for an additional 30 minutes, or until the liquid thickens into a gravy-like consistency.
  8. Serve the slow-cooker mock roast with mashed potatoes and your choice of vegetables. Enjoy!
