Ingredients

  • 2 lbs. red potatoes, cut into cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup diced green bell pepper
  • 2 tablespoons chopped fresh parsley

Directions

  1. Add potatoes to a large pot and cover with cold water. Bring to a boil and cook until potatoes are tender, about 10-15 minutes. Drain and set aside to cool.
  2. In a small bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper. Set aside.
  3. In a large bowl, combine cooled potatoes, red onion, celery, bell pepper, and parsley. Pour the dressing over the potato mixture and stir until evenly coated.
  4. Cover and refrigerate for at least 2 hours before serving.
