Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 cups milk
  • 3 large eggs
  • 2 tablespoons unsalted butter, melted
  • Lingonberry jam (for serving)
  • Powdered sugar (for serving)

Directions

  1. In a large mixing bowl, whisk together the flour, sugar, and salt.
  2. In a separate bowl, whisk together the milk, eggs, and melted butter.
  3. Gradually pour the wet ingredients into the dry ingredients while whisking continuously to form a smooth batter.
  4. Heat a non-stick frying pan or griddle over medium heat.
  5. Pour 1/4 cup of batter onto the pan and tilt it in a circular motion to spread the batter evenly into a thin pancake.
  6. Cook for about 1-2 minutes until the edges start to lift and the bottom is golden brown.
  7. Flip the pancake and cook for another 1-2 minutes until the other side is golden brown as well.
  8. Transfer the cooked pancake to a plate and cover with a clean kitchen towel to keep it warm.
  9. Repeat the process with the remaining batter, adding more butter to the pan if needed.
  10. Serve the Swedish pancakes warm with lingonberry jam and a dusting of powdered sugar. Enjoy!
