This homemade peach pie recipe by Chef John is a delightful treat that captures the essence of juicy peaches in a flaky crust. The buttery crust perfectly complements the sweet and tangy filling, creating a pie that is bursting with flavor. With simple ingredients and easy-to-follow instructions, this recipe will help you create a delectable peach pie that will impress your family and friends.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 teaspoon salt
  • 1/4 cup cold water
  • 6 cups sliced peaches
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter, diced
  • 1 egg, beaten

Directions

  1. In a large mixing bowl, combine the flour and salt. Add the chilled butter cubes and use a pastry cutter or your hands to cut the butter into the flour until the mixture resembles coarse crumbs.
  2. Add the cold water, one tablespoon at a time, and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 425°F (220°C).
  4. In a separate bowl, combine the sliced peaches, sugar, flour, lemon juice, and ground cinnamon. Toss to coat the peaches evenly.
  5. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish and trim any excess.
  6. Pour the peach mixture into the pie crust and dot the top with diced butter.
  7. Roll out the remaining dough and cut it into strips. Create a lattice pattern on top of the pie by weaving the strips over and under each other. Trim any excess dough.
  8. Brush the top of the pie crust with beaten egg.
  9. Bake the pie in the preheated oven for 15 minutes. Then, reduce the oven temperature to 375°F (190°C) and bake for an additional 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Remove the pie from the oven and let it cool for at least 2 hours before serving. This will allow the filling to set.
  11. Slice and serve the peach pie with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
