Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract
  • 2 cups whipped cream
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1 store-bought sponge cake, cut into small cubes
  • Fresh mint leaves for garnish (optional)

Directions

  1. In a medium saucepan, combine the fresh strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries break down and release their juices, about 10 minutes. Remove from heat and stir in the vanilla extract. Let the strawberry sauce cool completely.
  2. In a large bowl, whip the cream until soft peaks form. Add powdered sugar and lemon zest and continue to whip until stiff peaks form.
  3. In a trifle dish or individual glasses, layer the sponge cake cubes, strawberry sauce, and whipped cream. Repeat the layers until all ingredients are used, finishing with a layer of whipped cream on top.
  4. Cover the trifle and refrigerate for at least 2 hours, or overnight if possible, to allow the flavors to meld together.
  5. Before serving, garnish with fresh strawberry slices and mint leaves, if desired.
  6. Serve chilled and enjoy!
