Ingredients

  • 3 ears of sweet corn, husked and kernels cut off the cob
  • 2 tomatoes, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Directions

  1. In a large bowl, mix together the corn, tomatoes, bell pepper, and onion.
  2. In a separate bowl, mix together the cilantro, lime juice, and olive oil.
  3. Pour the dressing over the vegetables and mix until evenly coated.
  4. Add salt and pepper, to taste.
  5. Chill for at least 15 minutes before serving.
