Ingredients

  • 1 lb. carrots, peeled and cut into 1/2 inch slices
  • 1/3 cup orange juice
  • 1 tablespoon butter
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Directions

  1. In a medium saucepan, combine carrots, orange juice, butter, honey, salt, and pepper. Bring to a boil over medium-high heat.
  2. Reduce heat to low and simmer for 15 minutes, or until carrots are tender.
  3. Remove from heat and stir in parsley, if desired.
  4. Serve warm.
