Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1/2 pound cooked shrimp, chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup diced cucumbers
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Directions

  1. In a small saucepan, bring the quinoa and water to a boil over high heat.
  2. Reduce the heat to low and simmer, covered, for 12-15 minutes, or until the quinoa is tender and the water has been absorbed.
  3. Remove the pan from the heat and fluff the quinoa with a fork.
  4. In a large bowl, combine the cooked quinoa, shrimp, tomatoes, cucumbers, onion, parsley, olive oil, lemon juice, garlic, salt, and pepper.
  5. Mix until ingredients are evenly distributed.
  6. Serve the salad chilled or at room temperature.
