Ingredients
- 2 large potatoes, peeled and grated
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Optional: 2 tablespoons chopped fresh herbs (parsley, chives, etc.)
Directions
- Heat olive oil in a large skillet over medium heat. Once hot, add grated potatoes and spread into an even layer.
- Cook for 5 minutes, stirring occasionally, until potatoes are golden brown and crispy.
- Flip potatoes over and season with salt and pepper. Cook for an additional 5 minutes, stirring occasionally.
- If desired, add fresh herbs and stir to combine. Serve warm.
