Ingredients
2 large potatoes, peeled and grated
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Directions
Heat olive oil in a large skillet over medium heat. Once hot, add grated potatoes and spread into an even layer.
