Ingredients
1/2 cup sugar
1/4 cup all-purpose flour
2 tablespoons butter, melted
3 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups fresh strawberries, sliced
1 kiwi, peeled and sliced
1/4 cup apricot preserves, melted
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease two 12-cup muffin pans.
In a medium bowl, mix together the sugar, flour, butter, eggs, vanilla extract, baking powder, and salt. Stir until just combined.
Divide the batter among the prepared muffin cups. Top each muffin cup with a few slices of strawberry and kiwi.
Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of each tartlet comes out clean.
Allow tartlets to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
Once cooled, brush each tartlet with melted apricot preserves.
Serve and enjoy!
