Ingredients
- 1/2 cup sugar
- 1/4 cup all-purpose flour
- 2 tablespoons butter, melted
- 3 eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups fresh strawberries, sliced
- 1 kiwi, peeled and sliced
- 1/4 cup apricot preserves, melted
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease two 12-cup muffin pans.
- In a medium bowl, mix together the sugar, flour, butter, eggs, vanilla extract, baking powder, and salt. Stir until just combined.
- Divide the batter among the prepared muffin cups. Top each muffin cup with a few slices of strawberry and kiwi.
- Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of each tartlet comes out clean.
- Allow tartlets to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, brush each tartlet with melted apricot preserves.
