Spinach and White Bean Soup
Ingredients
1 tablespoon butter
1 onion, diced
1 clove garlic, minced
2 cups fresh spinach, chopped
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Directions
In a large skillet, melt butter over medium heat.
Add onion and garlic, and sauté until onion is softened, about 5 minutes.
Add spinach and cook until wilted, about 3 minutes.
Stir in Parmesan cheese, salt and pepper. Cook for 1 minute more.
Serve hot.
