Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups freshly ground apples
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
  3. In a large bowl, beat together the oil, sugar, eggs and vanilla extract. Add the dry ingredients to the wet ingredients and mix until smooth.
  4. Stir in the ground apples and walnuts.
  5. Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  6. Allow the cake to cool before serving.
